Definition:

When a wine’s acidity, tannin, fruit, and booze are all getting along like kids at recess with just enough adult supervision to keep it from ending in tears.

Why it Matters:

In cocktails, balance is the invisible referee keeping sweet, sour, bitter, and boozy from starting a bar fight in your glass. Too much sugar? Your drink tastes like cough syrup. Too much spirit?
